1 – Prep noodles.Boil the lo mein noodles according to package instructions. Drain the cooked noodles and rinse with cold water.

Julienne the peppers and carrots into thin strips.

2 – Cook the chicken.Cut the chicken into strands. Heat a large skillet to medium heat and add oil and butter. Add the chicken to the pan and cook, seasoning lightly with salt and pepper. Once cooked, remove from the heat.

This chicken lo mein recipe makes the most perfect entree. This restaurant-style entree is so easy to make, and the results are incredible. We love ours, loaded with chicken and tender vegetables.

Ingredients

  • 8 oz lo mein noodles
  • 3/4 lb chicken breast boneless skinless
  • 2 Tbsp oil for sautéing (divided)
  • 2 Tbsp unsalted butter for sautéing (divided)
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1 large carrot julienned
  • 1 red pepper julienned
  • 3 garlic cloves minced
  • 1 Tbsp ginger grated
  • 2 Tbsp green onion sliced

Instructions

  • Cook the lo mein noodles according to package instructions. Once cooked, rinse the noodles under cold water to stop the cooking process, and then set aside.

  • Cut the chicken into strands.

  • Add 1 Tbsp of oil and 1 Tbsp of butter to the pan. Once the pan is hot, add the chicken. Leave the chicken alone to cook for a couple of minutes before lightly stirring.

  • Remove the cooked chicken from the pan and set aside.

  • Add 1 Tbsp of oil and 1 Tbsp of butter to the pan and add the carrots and peppers. Saute lightly until the vegetables are cooked. Add in the garlic and ginger and cook until fragrant.

  • In a bowl, mix together the sauce ingredients.

  • To the pan, add the noodles, chicken, and sauce. Turn the heat up to let the sauce thicken. Once the sauce has thickened and the noodles are reheated, the lo mein is ready for serving.

  • Garnish with green onions and enjoy!

    This was a really good lo mein recipe. I did not have chicken but I did have shrimp so I used that instead. My other lo mein recipe calls for brown sugar instead of honey. The honey is much better.
